Finely Chopped Garlic
1 Small Onion
2 Large Tomatoes
8 Eggs, Beaten
Heat some oil in a pan and add the garlic and onion, allow to cook for a few minutes.
Now add the ham, tomatoes and peppers and fry until most of the liquid has evaporated.
Tip this mixture into a clean bowl and put to one side.
In the frying pan heat a little oil and pour in the eggs.
Cook gently until starting to set, then add the pepper mixture, cover the pan with a lid.
Leave on a very low heat for 5 to 10 minutes to finish cooking.
