Barbeque Spice Paste

Oriental

10 Bird’s-eye Chillies,
25 Red Chillies,
15 Shallots,
10 Cloves of Garlic,
 2 Tomatoes,
 2 tbs Oil,
 4 tbs Lime Juice,
 1 tbs Sugar,
 Salt & Pepper.

Steam the chillies, shallots, tomatoes and garlic and cook for five minutes.
Add the lime juice, sugar, salt and pepper to taste.
Blend all coarsely together in a processor.

Potato Fritters

Aloo Pakoras

Ingredients

½ Cup Chickpea Puree,
4 tbs Oil,
70 gm Chopped Onion,
½ Cup Shredded Raw Potato,
½ Cup Cornflour,
3 tbs Chopped Parsley,
½ tbs Cayenne,
5 tbs Water,
salt.

Mix all together well and roll into balls, flatten them slightly and deep fry until golden.
Drain well on kitchen paper and serve.

Pineapple Chutney

Adrak Chatni

Fresh Ginger Chutney

Ingredients

40 gm Fresh Diced Ginger
3 tbs Fresh Garlic
75 gm Seedless White Grapes.
200 ml White Wine
200 ml Lemon Juice
8 tbs Ground Ginger
Salt.

Saute the ginger, garlic and grapes in 2 tbs Ghee until soft.
Then add the lemon juice, white wine, ground ginger and salt and simmer together for 2-3 mins.
Blend in liquidiser and allow to cool before storing in airtight jars.
