Fideos alla Catalán
250 gm Pork Spare Ribs
100 gm Chorizo Picante
100 gm Butifarra (white sausage)
1 Chopped Onion
1½ lt Meat Stock
500 gm Fideos or Pasta
40 gm Almonds, Hazelnuts or Pinenuts
1 Slice Toast
100 gm Grated Cheese
Heat a little oil in a pan and brown the ribs.
Then add the chopped onion and fry gently until soft.
Add the tomatoes and a good pinch of paprika and stir.
Add the spicy sausage cut into pieces and the sliced butifarra.
Pour over the stock and add the pasta.
Bring to the boil then lower the heat to simmer for 10 minutes.
Bend the nuts, garlic, bread, parsley, cinnamon, saffron with a little stock to make a paste.
Stir this into the casserole and cook for another 10 minutes until the meat is tender.
Sprinkle on the grated cheese and serve.
