1 hd Red Cabbage
100 gm Smoked Bacon
100 gm Pork Schmalz
½ lt Red Wine
¼ lt Red Wine Vinegar
4 Apples, peeled and sliced
100 gm Sultanas
Salt & Pepper
Sauté finely diced smoked bacon and onion in pork fat.
Add red wine or reduced stock if preferred, red wine vinegar and shredded red cabbage.
Add finely sliced apple, sultanas and season.
Leave to stand for one hour, then cover and cook in the oven until soft.
